Panko Zucchini Chips

INGREDIENTS
1 Cup Lemon and Herb Panko Bread Crumbs (Woolworths)
1 Cup Plain Flour
2 Eggs
1/4 Cup Milk
1 Zucchini, cut into Batons
Vegetable or Canola Oil Spray
METHOD
Preheat your oven to 200 degrees and prepare a baking tray.
Prepare 3 bowls. One bowl for Flour, one bowl for breadcrumbs and one bowl for the egg and milk. 
Whisk egg and milk together until well combined. 
Take 3 or 4 Zucchini Batons and add them to the flour. So that the flour sticks to the zucchini, let the zucchini rest in the flour for at least 20 seconds.
Then add the coated zucchini to the egg mixture and also let them rest for at least seconds in the egg mix. 
Next toss to coat the zucchini Batons in the Panko Breadcrumbs and neatly place on a baking tray. 
Repeat with the rest of the Zucchini Batons until finished. Spray all zucchini chips with Conola oil spray and bake in the oven for 15 minutes. 
Serve warm with your favourite sauce or on their own. 
NOTES
I use the Woolworths Lemon and herb Panko Breadcrumbs. They are flavourful and there is no need to add any extra seasonings. You can use any flavour of Panko Breadcrumb you like or just go with plain and add some salt. 
I have used the Peri Peri Panko breadcrumbs; they were too hot for my Puggles but very yummy for me!
