Blender Banana Pancakes

INGREDIENTS
1 Banana (As ripe as possible) 2 Eggs
1/3 Cup Plain/ Greek Yogurt
1 Tbsp Caster Sugar (Optional)
1/2 tsp Vanilla Essence (Optional)
1 tsp Baking Powder
1 Cup Plain Flour
METHOD
In a Blender (I use a Nutri bullet), place Banana, eggs, yogurt, caster sugar and vanilla essence. Blend for at least 20 seconds. This is to make the batter light and fluffy.
Add in Baking Powder and Flour and blend until combined. If needed, scrape the sides of the blender to ensure all flour in incorporated.
Heat fry pan on low/ med heat. Cook until both sides are golden brown and cooked in the middle. This may only be 1 minute per side.
Serve plain or with your desired sauce. I love dipping the pancakes into yogurt with maple syrup.
