Tasty Veggie Waffles
INGREDIENTS
1 Zucchini, Grated with as much moisture squeezed out as possible
1 Carrot Grated
2 eggs
2 Tbs Light Soy Sauce or Salt reduced Soy Sauce
1/3 Cup Corn Flour
1/2 Cup Plain Flour
1 Tsp Baking Powder
METHOD
Pre heat waffle iron and use a light oil spray if required
In a large bowl, add eggs, soy sauce, corn flour, plain flour and baking powder. Whisk until well combined.
Stir in zucchini and carrots.
Scoop in about 1/3 cup of the waffle mix onto the waffle maker and close. After about 20 seconds flip the waffle maker over to ensure the waffle cooks both sides.
Cook the waffles for about 6- 7 minutes or until very little steam is coming out of the waffle iron and the waffles are looking nice and golden brown.
Serve waffles with your favourite toppings. I love Kecap Manis, Cupi Mayo and fried spring onions.
