Apricot Chicken Rice
INGREDIENTS
6 Apricots, roughly chopped
2 Chicken Breasts, Diced
1 Onion, finely diced
1 Small head of broccoli cut into small florets
1 Carrot finely diced
2 Packets Salt Reduced French Onion Soup
1 1/2 Cups Jasmine Rice
1L Water
METHOD
Add onions to a large fry pan with 2 tablespoons of oil, over low top medium heat.
Once the onions are soft, add the diced chicken breast. Cook the chicken and onion for at least 3 minutes or until chicken has started to change to a white colour all over.
Add the rice to the pan and stir through. The add the French Onion Soup Packets and water and stir through. Cook stirring occasionally for 5 minutes.
Stir through the apricots and carrot and cook for 5 minutes. Then add the broccoli and cook for a further 10 minutes or until rice is cooked and veggies are tender.
NOTES
I use fresh apricots, however, I have used canned apricots in their juices before and the kids loved it! I even put in some of the juice from the can.
